I have never been the world's greatest cook, mostly (I tell myself) because I haven't tried all that much. I've been the butt of many family jokes because of it. Lately though I have been making more of an effort to cook for myself and my guys. Our little guy needs to have good meals each night. I signed up to get on the Kraft mailing list and love their magazines that they send out periodically. I also signed up for e-mealz.com and even though I'm not interested in all their recipes, I've been finding some things I want to try that way too.
Last night I made Leftover Spaghetti Pie from one of the Kraft magazines. I'm not sure why it's called "leftover" spaghetti pie other than maybe that they're pretty sure you will have leftovers. Our little guy is a very picky eater, and he LOVED it, so it will definitely be on the menu again soon. I am always looking for new recipes, so in case you are too, here's the recipe....
* 1/4 lb. (4 oz) Velveeta cheese, cut in to 1/2 in cubes
* 1 pkg (60z) Oscar Meyer italian style chicken breast strips (I couldn't find Oscar Meyer so I just bought Tyson)
* 1 jar (14 oz) spaghetti sauce
* 2 tbsp parmesan cheese
