On our girls weekend this past Saturday and Sunday I was telling the girls that every Friday is "pizza night" for our family now. It used to be McDonald's night so this is definitely a step up. A friend shared her recipe for "bubble pizza" with me a while ago and it quickly became a family favorite. It's simple (really simple); I'm a Mom of 3 kids 5 and under- simple is what we do here! They asked me to share so here it is:
Bubble Pizza
* 1 1/2 pounds ground beef (or toppings of your choice) (I do half mini turkey pepperoni for the kids and half diced ham and pineapple for the grown ups) :)
* 1 can (15 oz) pizza or spaghetti sauce
* 1 tube refrigerated buttermilk biscuits (I use the Grands Jr. Honey Butter flavor)
* 1 1/2 cups Shredded Mozz Cheese
* 1 cup Shredded Cheddar Cheese
* Parmesan Cheese (0ptional)
(I always season with Italian Seasoning too)
Quarter biscuits & place in greased 13x9 pan. Top with sauce and ingredients of choice.
Bake uncovered at 400 degrees for 20 minutes.
Sprinkle with cheeses. Top with parmesan if desired.
Bake 5 min longer or until cheese is melted.
Let stand 5-10 minutes before serving.
I have not quite figured out the perfect timing to get the pizza done but not burnt on the edges of the crust. The cook time above is the closest I've come. I know I should really throw some veggies on there too but my kids refuse to eat vegetables and some days I don't feel up to the battle.
