Baked Penne and Smoked Sausage

Here's another recipe I recently tried. I actually got it from my friend Tara at my bridal shower, so over three years later I decide to try it and I'm glad I did. Thanks Tara, it was really good! In the picture above I substituted farfalle noodles for the penne noodles, turkey sausage for the smoked sausage, mixed veggies for the peas, and cream of chicken soup for the cream of celery soup. Anyway, here's the recipe....

Baked Penne and Smoked Sausage

* 1 (16 oz) pkg smoked sausage
* 1 (10 3/4 oz) can cream of celery soup
* 1 1/2 cup milk
* 4 cups cooked penne pasta
* 1 cup shredded mozzarella cheese
* 1 1/2 cup French's Cheddar French Fried Onions
* 1 cup frozen peas

Heat oven to 375 degrees. Cut sausage in to 1/4 in. slices; brown and drain. Combine soup and milk in 3 quart casserole dish. Stir in cooked pasta, sausage, 1/2 cup cheese, 1/2 cup fried onions and peas. Bake 30 minutes, stir. Top with remaining cheese and fried onions. Bake 3 min- until golden.

Substitutions:

* Use turkey sausage instead of smoked sausage for a lower fat meal.
* Buy the fully cooked skinless sausage so you don't have to brown it before you cook it.
* Use 1 can cream of broccoli or cream of mushroom instead of cream of celery.
